Blueberry Booyah!

So, this weekend K and I traveled down south for my mom's birthday! It was awesome! The birthday girl taught me how to make a couple of things while I was there...

One being a Pepperjack Pimento Cheese Dip:
2 cups of shredded pepperjack cheese
1 block of super-softened cream cheese
1/2 a jar of pimentos (the small jar..uhhh 4oz?)
1/3 cup of mayonnaise
a pinch of garlic

Stir together in a sa-weet, hot red kitchen-aid mixer, and wah-lah! Delicious Pimento Cheese. MMM MMM.
Oh, get some Triscuits or Wheat Thins to dip.



AND, she taught me how to make a blueberry buckle:
3 cups of blueberries
1 cup of milk
1 box of cake mix
1 whole stick of butter
*post-baking must have* vanilla ice cream

Fresh, handpicked blueberries from my Mimi's garden


Any kind of yellow cake mix


Yup, 1 whole stick


Pour blueberries on bottom, then milk, then cake mix
Drizzle butter over top


Bake for 30-40 minutes @ 350


Scoop into a bowl, add vanilla ice cream and totally devour


I can't believe these were both a success. Maybe after baby guff is born this blog will become a COOKING blog!

Hahahahahahahahahahahahaha!!! Ahhhh hahahahahahahahaha!!! That was just too much.

  3. i made a similar blueberry "buckle" once - but i called it a blueberry dump cake. fresh blueberries were NOT involved though. Try this:

    1 can of blueberry pie filling
    1 can of pineapple (the smallest pieces, and optional)
    1 box of white cake mix
    1 stick of butter

    just pour the blueberries and pineapples in a baking dish, pour the cake mix over it, and drizzle melted butter OR just cut up squares of butter and place over the top and it will melt into it. No stirring is involved!! No messy mixing bowls, nothing!! It's amazing!! Try it! Bake for like 30-45 min on 350. Soooo good.

  4. Yum to both! My grandmother makes a similar dessert with peaches and it's awesome! Also- I always make pimento cheese but have never tried it with pepper jack... sounds and looks good! You are becoming quite the domestic goddess as of late. :)
